Baked beans with a health twist

Ingredients

  • 1 x chicken breast
  • 1 tbsp of greek yoghurt
  • 2 tbsp tikka paste (increase as desired)
  • 1 x tin of butter beans
  • 1 x tin of tinned chopped tomatoes
  • 2 tsp miso paste
  • Coriander for garnish

Method

  1. Marinade chicken breast in yoghurt and 1/2 the tikka paste for a minimum of 15 minutes but longer the better.
  2. Griddle or fry the marinated chicken breast until cooked through
  3. Slice chicken breast and set aside
  4. Take a frying pan or use the one the chicken was cooked in (no need to clean) and add tinned tomatoes and beans and add the other half of the tikka paste and miso paste.  Bring to boil and then let simmer until reduced to a thicker consistency.

*Feel free to leave the chicken out for a vegetarian option.

**I use homemade tikka paste as it reduces my UPF consumption and I use it quite a lot but if you don’t use it a lot then feel free to use shop brought.

Tip

This dish is so quick and easy and I actually came up with it rather by accident as I had a spare griddle chicken breast that I needed to use up.  You could have it as a lunch or leave the chicken out and have it as a side dish.  Without the chicken you can easily produce this without planning if you keep tinned ingredients in the cupboard.
