Salmon salad bowl

Ingredients

  • 1 pre cooked salmon fillet
  • Handful of fresh spinach leaves
  • 2 carrots grated
  • 1/2 avocado
  • Defrosted edamame beans (handful)
  • Grated or chopped cheese of your choice (e.g cheddar, feta, brie)
  • Chopped cucumber
  • Balsamic/olive oil dressing

Method

Layer the bowl starting with the bed of spinach, then carrot, edamame, cucumber, avocado and top with salmon and cheese. Drizzle over the dressing and enjoy

Tip

Don’t feel you have to stick with these ingredients and use what you have in the fridge to save waste. I’ve chosen Salmon due to it’s omega 3 content and spinach for its anti-inflammatory properties .
