Turmeric Asian Salad Dressing

Ingredients

  • 2 fresh chillies, trimmed and deseeded
  • 4 garlic cloves
  • 30g fish sauce
  • 60g lime juice
  • 20 palm sugar
  • 1 stalk of lemongrass or table spoon of chopped lemongrass from jar
  • 2 eschalots (30g approx)
  • 30g red onion
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric or curcumin
  • 2 tsp sesame oil

Method

  1. Finely chop the chilli and garlic and add to a bowl.
  2. Add fish sauce, lime juice, and sugar (if you don’t have palm sugar use brown sugar).
  3. Finely chop lemongrass and eschalots and finely slice the red onion.  Add these to a frying pan with the sesame oil and chilli powder and turmeric.  Fry on med/high heat for about 3 mins.  Add these to the bowl with the other ingredients and set aside to cool.  Pour into a jug and serve over a salad of your choice.

Tip

This works great over a Thai beef salad.  Lay a bed of assorted leaves such as basil, mint and coriander, top with fried beef and cherry tomatoes, drizzle over the dressing and top with seeds or nuts.

Alternatively fill a ‘budda’ bowl full of good ingredients such as radish, beetroot, edamame beans, sweet corn, top with a protein such as roasted chicken and then drizzle dressing over it.
